Eat In: Ana’s Thai Green Curry

I stole this recipe off the lovely Ana over 6 years ago when I left the sunny Isle of Mallorca. As there weren’t many home cooked meals or moments of homeliness it’s a dish, despite being Thai, that really reminds me of my time in Spain. Ana would cook it for me and we’d eat over a glass of wine whilst putting the world to right, moaning about the overcast day despite it being December and catch up on an episode or two of Home & Away. It was a given that when I left it would come with me and it’s stayed with me ever since.

As I’ve mentioned in most of my recipes I love flavoursome yet simple to cook dishes and this is precisely that. Light, aromatic and impressive you can chuck this together one evening after work or serve it as the piece de resistance at a dinner party. Most of the ingredients you’ll more than likely already have in your cupboard at home, but if you don’t I can assure you once you’ve cooked this once you’ll keep doing so meaning they won’t go to waste.

Ingredients – serves 4

1 tbsp olive oil

1 tbsp brown sugar

1-2 tbsp Thai Green Curry paste (dependent how hot you would like it)

4 chicken breasts, diced

1 lime, Zest and juice

Dash of fish sauce (optional)

Dash of soy sauce

1 tin of coconut milk

Peas or mangetout

Coriander, handful chopped

  1. Heat the oil, brown sugar and curry paste over a medium heat for 1 minute or until bubbling 
  2. Add the chicken and zest of 1 lime
  3.  Cook until the meat is white
  4. Add the coconut milk, fish sauce and soy mixing well to combine
  5. Simmer for 30
  6. Add peas or mangetout and Simmer for a further 10-15 mins 
  7. Squeeze juice of 1 lime into the curry and add chopped coriander
  8. Serve with rice or rice noodles
